Roasted Grapes
For: 4 persons | Preparation time: 3 min. | Cooking time: 15 min.
Ingredients: 1 pound red seedless grapes, 1 tablespoon olive oil, 2 teaspoons fresh thyme leaves, salt, fresh-ground pepper.
- Stem, rinse and dry the grapes.
- On a 12- by 15-inch baking pan, mix the grapes with the oil and spices. Line the pan with parchment paper or a baking sheet, if desired.
- Bake in a 400? F. oven for 15-20 minutes, shaking the pan occasionally, until the grapes begin to blister, about 15 minutes.
- Excellent with braised meats, steamed grains or as a garnish for omelets and frittatas. Other fresh herbs-lavender, rosemary, parsley, chives, basil-may be substituted to complement other flavors.
- Serve immediately, or let stand for up to 4 hours.
Tuna Basque Style
For: 4 persons | Preparation time: 20 min. | Cooking time: 45 min.
Ingredients: 1 slice of fresh tuna weighing about 1- ¼ lb, 5 small green peppers, 4 tomatoes, 1 eggplant, 1 large onion, 1 garlic clove, 1 sprig of thyme, 1 bay leaf, flour, 2 tablespoons olive oil, 2 hot peppers.
- Dust the tuna with flour and fry it on both sides in 2 tablespoons olive oil till it is golden.
- Remove the tuna from the pan.
- Peel the tomatoes, cut and remove the seeds from the tomatoes and green peppers. Sauté them in the oil. Add the cubed eggplant, the chopped onion and the garlic clove.
- Bring to a boil, then add the thyme, the bay leaf, and the hot peppers, if you like spicy dishes. Add salt and pepper.
- Put the tuna back in the pan, lower the heat and let simmer for 20 min.
- Serve with Creole rice.
